What’s the point of looking for deleted domains with incoming links, if the domain's not relevant to the product or service your selling how can this help.

If you buy 123systems.com for example and all the links are for the last business that has no relevancy to your new business how's this going to help you?

I think its for the likes of people buying up domains which they feel are worth money either now or in the future to make a profit

True, but if you buy a domain that does have something to do with your business or theme, like maybe with keywords in the name, previously built-up incoming traffic can be really useful.
